Led by Culinary and Musical Visionaries
Epicurus unites Lars Seier Christensen — co-owner of the three-Michelin-starred Geranium (World’s Best Restaurant 2022) and the two-Michelin-starred Alchemist — joins Mads Bøttger of the one-Michelin-starred Dragsholm Castle, together with jazz legend Sir Niels Lan Doky.
Completing the team is Rasmus Shepherd-Lomborg, founder of Ruby, the pioneering cocktail bar that has appeared six times on the World’s 50 Best Bars list.

Epicurus reimagines the jazz standard, presenting exclusive performances curated by Sir Niels Lan Doky. Featuring internationally acclaimed musicians, these one-of-a-kind projects blend original compositions, jazz classics, and transformed pop hits — live music performances you won’t hear anywhere else.
Guided by Michael Hajiyianni, former head bartender at Alchemist, the bar explores cocktails with the same balance and vision that define our Heritage and Signature collections. Innovative methods, rare ingredients, and a carefully selected wine list come together to create a menu that feels inventive, precise, and in step with the music.
A Celebration of Taste and Togetherness
The kitchen celebrates Nordic cuisine rooted in French tradition, crafted with seasonal ingredients from Dragsholm Castle. Each dish highlights pure flavors and the joy of sharing — part of a larger house that lives through cocktails and live jazz.
Designed by the acclaimed studio GamFratesi, the interiors combine sophistication and comfort through natural textures and timeless materials. More than a restaurant, Epicurus is an intimate house where food, music, and people come together.
